Mango Black Rice Pudding

A favorite Indian dessert – Rice Kheer or Rice Pudding is afavorite among kids and adults alike. Enjoy an easy version of the same.

  • 1 cup uncooked black rice
  • 2 cups water
  • 1/2 cup coconut milk or coconut cream
  • 1/4 cup brown sugar or sweetener of your choice, adjust to taste


  • Optional toppings: diced fresh fruit like mango pieces additional coconut sugar, nuts like slivered almonds and cashews, raisins, cinnamon, cardamom powder


  • In a small saucepan, combine the rice, coconut milk, and water.
  • Bring to a boil over medium high heat for 10 mins; reduce heat and simmer uncovered, for 20 - 30 minutes until a majority of the liquid is absorbed, the rice is plumped and tender, and the mixture is thickened into a pudding consistency. (Add more coconut milk, as needed, if the liquid is absorbed but the rice is not yet plumped and tender).
  • Remove from heat and stir in sweetener to taste.
  • Serve hot, warm, or cold, with any or all of the optional toppings!
