Tofu Scramble with Toast or oil free parathas or pita bread
 
 Ingredients:
  • 1 block Extra Firm Tofu
  • Onion
  • Carrots
  • Green onion
  • Broccoli
  • Zucchini
  • Yellow squash
  • Orange bell pepper
  • Yellow bell pepper
  • Red bell pepper
  • Green bell pepper
 
All finely diced
 
Spices & Flavorings:
  • Ginger
  • Green chilis
  • Roasted cumin
  • Black Pepper, powdered
  • Line/lemon
  • Cilantro
 
Optional: Add a cup of cooked black beans
 
Method:
  1. Finely dice all veggies.
  2. Sauté onions using one Tablespoon of water to deglaze the pan. Cover and sauté until slightly golden brown.
  3. Add ginger & green chilis or jalapeños, finely diced. Add turmeric powder.
  4. Add veggies & sauté in order of cooking time.
  5. Remove water, squeeze extra water & Crumble Extra firm Tofu. Add to Veggie mixture. Sauté for 2 mins.
  6. Add black pepper, salt, lime juice, chopped cilantro.
 
Serve with Toast or pita or homemade oil free parathas! Enjoy!
