Tofu Scramble with Toast or oil free parathas or pita bread

This healthy 15 minute vegan recipe is packed withprotein and tons of veggies.

  • 1 block Extra Firm Tofu
  • Onion
  • Carrots
  • Green onion
  • Broccoli
  • Zucchini
  • Yellow squash
  • Orange bell pepper
  • Yellow bell pepper
  • Red bell pepper
  • Green bell pepper
  • All finely diced

Spices & Flavorings:

  • Ginger
  • Green chilis
  • Roasted cumin
  • Black Pepper powdered
  • Line/lemon
  • Cilantro
  • Optional: Add a cup of cooked black beans


  • Finely dice all veggies.
  • Sauté onions using one Tablespoon of water to deglaze the pan. Cover and sauté until slightly golden brown.
  • Add ginger & green chilis or jalapeños, finely diced. Add turmeric powder.
  • Add veggies & sauté in order of cooking time.
  • Remove water, squeeze extra water & Crumble Extra firm Tofu. Add to Veggie mixture. Sauté for 2 mins.
  • Add black pepper, salt, lime juice, chopped cilantro.


Serve with Toast or pita or homemade oil free parathas! Enjoy!
