Brown Lentil Veggie Pulav & Raita

A delicious, heart-healthy, one-pot rice meal recipe.

Ingredients
  

Pulav
  • 1 Cup Brown Basmati Rice soaked for 1/2 hr.
  • 1 Cup Brown lentils soak for 2-4 hrs
  • 2 Cups diced mixed veggies
  • 2 Cups Water
  • Salt to taste
Whole Spices
  • 1 Bay leaf
  • 1 teaspoon Cumin seeds
  • 1 Stick Cinnamon
  • 2 Cardamoms
  • 2 Cloves
  • 4-6 Black pepper corn
  • Or 2 teaspoons Garam Masala
Plant Based Raita Recipe
  • 2 cups plant based yogurt
  • 1 cup cucumber finely diced or grated
  • A pinch jeera powder
  • A pinch chilli powder
  • ½ bunch chopped cilantro
  • Salt to taste

Method
 

  1. Dry roast the spices - whole or roughly ground for a couple of mins in a 4Q pan or in saute mode in an Instant Pot.
  2. Add the soaked Rice and Lentils. Add the water and salt.
  3. Add the diced veggies
  4. Set IP to high pressure for 4 mins Natural Release.
  5. After the pressure is released let it sit for 10 mins.
  6. Transfer to a large mixing bowl and toss to mix. Do not overmix or mix with a ladle - it will turn mushy if you overmix.
Plant Based Raita
  1. Mix all the ingredients to make Raita. Serve with viggie pulav!!!

Notes

 
Note: Use whole green moong or any small lentil.
