Ingredients

block Extra Firm Tofu
Onion
Carrots
Green onion
Broccoli
Zucchini
Yellow squash
Orange bell pepper
Yellow bell pepper
Red bell pepper
Green bell pepper
All finely diced
Spices & Flavorings:
Ginger
Green chilis
Roasted cumin
Black Pepper
powdered
Line/lemon
Cilantro
Optional: Add a cup of cooked black beans
Instructions
Finely dice all veggies.
Sauté onions using one Tablespoon of water to deglaze the pan. Cover and sauté until slightly golden brown.
Add ginger & green chilis or jalapeños, finely diced. Add turmeric powder.
Add veggies & sauté in order of cooking time.
Remove water, squeeze extra water & Crumble Extra firm Tofu. Add to Veggie mixture. Sauté for 2 mins.
Add black pepper, salt, lime juice, chopped cilantro.
Notes
Serve with Toast or pita or homemade oil free parathas! Enjoy!
