Brown Lentil Veggie Pulav & Raita
A delicious, heart-healthy, one-pot rice meal recipe.

Pulav
- 1 Cup Brown Basmati Rice soaked for 1/2 hr.
- 1 Cup Brown lentils soak for 2-4 hrs
- 2 Cups diced mixed veggies
- 2 Cups Water
- Salt to taste
Whole Spices
- 1 Bay leaf
- 1 teaspoon Cumin seeds
- 1 Stick Cinnamon
- 2 Cardamoms
- 2 Cloves
- 4-6 Black pepper corn
- Or 2 teaspoons Garam Masala
Plant Based Raita Recipe
- 2 cups plant based yogurt
- 1 cup cucumber finely diced or grated
- A pinch jeera powder
- A pinch chilli powder
- ½ bunch chopped cilantro
- Salt to taste
Dry roast the spices - whole or roughly ground for a couple of mins in a 4Q pan or in saute mode in an Instant Pot.
Add the soaked Rice and Lentils. Add the water and salt.
Add the diced veggies
Set IP to high pressure for 4 mins Natural Release.
After the pressure is released let it sit for 10 mins.
Transfer to a large mixing bowl and toss to mix. Do not overmix or mix with a ladle - it will turn mushy if you overmix.
Note: Use whole green moong or any small lentil.
